How to use a cream charger

Five steps, start to finish — chilling, filling, charging, mixing, and dispensing.

  1. Chill your cream and dispenser — cold cream whips more reliably and holds its structure longer.
  2. Fill the dispenser with cream (and sugar or flavoring, if using) to the fill line — don't overfill, or the gas won't mix properly.
  3. Screw a charger into the dispenser's charger holder until you hear the gas release into the canister, then remove the empty charger.
  4. Shake the dispenser several times to fully mix the gas through the cream.
  5. Dispense upside-down with the lever fully pressed for a clean, stable result.

One standard 8g charger is built for roughly one pint (about half a litre) of cream. Kitchens going through this constantly usually move to a large-format tank instead of reloading a fresh charger every round.
