What is food-grade nitrous oxide?

Food-grade nitrous oxide (N₂O) is nitrous oxide made and packaged for use in food — the gas that whips cream in a dispenser. Here's what the label means, how it differs from medical and automotive nitrous, and what to check before you buy.

The definition

What "food grade" means

Nitrous oxide is a food additive with its own additive number, E942, and in the United States the FDA lists it as Generally Recognized as Safe for specific food uses, including as a propellant and aerating agent (21 CFR 184.1545). That is the job it does in a whipped-cream dispenser: it dissolves into the cream under pressure and expands as the cream leaves the nozzle, giving light, stable whipped cream.

"Food grade" on a charger, cylinder or tank means the gas and its container are made for that culinary use. Packaging usually says food grade, and many brands print the E942 code as well.

Food-grade vs medical vs automotive nitrous oxide

  • Food grade — for culinary use in whipped-cream dispensers and siphons; sold as chargers, cylinders and tanks.
  • Medical grade — made to pharmaceutical standards for clinical use and supplied through medical channels, not for the kitchen.
  • Automotive / industrial — used for engine performance and industrial processes. Automotive nitrous commonly has sulfur dioxide added and must never be used in food.

If you're buying for a kitchen, buy only gas sold as food grade for culinary use.

Before you buy

How to check you're getting food-grade N₂O

  • The packaging says food grade (and often shows E942).
  • It's sold as a culinary product — for whipped cream, foams and infusions.
  • The brand and seller are identifiable, and the seller can provide product documentation. Purity documentation for the products we stock is available on request through a trade account.
  • Containers are sealed and undamaged.

Storing chargers and tanks

Keep chargers, cylinders and tanks in a cool, dry place away from heat sources and direct sunlight, out of reach of children, and follow the manufacturer's label. Never puncture or heat a container, and only use it with equipment designed for it — see the dispenser compatibility guide.

Common questions

Food-grade nitrous oxide: FAQ

Is the nitrous oxide in cream chargers food grade?

Chargers made for whipped-cream dispensers use food-grade nitrous oxide. Check the packaging, and buy from a seller who can tell you the brand and provide documentation.

What does E942 mean?

E942 is the food-additive number for nitrous oxide, used on labels to identify it as a food ingredient (here, a propellant and whipping gas).

Can I use automotive nitrous for whipped cream?

No. Automotive nitrous is not made for food and commonly contains added sulfur dioxide. Use only gas sold as food grade.

Where can I buy food-grade nitrous oxide tanks?

We stock food-grade 2000g tanks and 615–680g cylinders from several brands, shipped to eligible states — see shipping & state compliance.
